Ripe cherry selection, lot separation and timely processing shape the cup before any green coffee reaches a roaster. Traceability keeps those choices connected to a producer group, place and harvest.
That information is not decoration. It helps the roaster understand density, moisture and likely flavour development before creating a profile.
Selection protects identity
Cupping checks sweetness, structure, clarity and defects, but it should also ask what makes the lot distinct. A Sơn La arabica should not be pushed toward the same profile as a Đắk Lắk robusta.
Choosing coffee for character allows different Vietnamese regions and species to remain visible in the final collection.
Roast for the way people brew
A roast profile must make the coffee soluble enough for its intended methods while preserving sweetness and origin character. Phin and espresso may need more development than a delicate filter profile, but darker does not have to mean burnt.
Small test batches, measured changes and repeated tasting turn the producer’s work into a coffee customers can brew consistently at home.
